Chinese matcha has a reputation problem. Ask most matcha drinkers whether they'd buy it and the answer is usually a firm no — often without having tried it. That preference is understandable. It has a history behind it. But the history is more complicated than the reputation suggests, and the facts in 2025 tell a different story to the one most people have heard.
This piece looks at where the reputation came from, what the evidence actually shows, and what has changed.
How the reputation was formed
Global matcha consumption grew sharply from around 2012 onwards, driven by the mainstream adoption of matcha lattes, health food culture, and social media. Japan — the primary source of ceremonial grade matcha — could not scale production fast enough to meet demand. Traditional stone-milling is slow: a single granite mill produces approximately 30 to 40 grams per hour. Japan's tea-growing regions are geographically limited. Supply could not keep pace.
Chinese producers moved into the gap quickly. The matcha that reached Western markets in those early years was largely produced using methods that differed significantly from Japanese ceremonial standards. Many producers pan-fired rather than steamed the leaf — a processing difference that produces a yellower, more bitter powder. Shade-growing periods were often insufficient or absent. Industrial ball mills, which operate at higher speeds and temperatures than granite stone mills, were widely used. The result degraded the colour, flavour, and amino acid content of the final product.
Western consumers who encountered this matcha drew a reasonable conclusion: Chinese matcha was inferior. That conclusion became embedded in the preferences of matcha enthusiasts, industry buyers, and premium brands alike. It has persisted largely unchanged since.
What the evidence shows now
The Chinese matcha market is large and variable. Low-quality product still exists. But characterising all Chinese matcha by the standards of early commercial-grade production is no longer accurate, particularly for matcha sourced from Guizhou Province.
On growing conditions
Guizhou Province in southwest China has measurably distinctive terroir for tea production. The province sits at low latitude — close to the equator — meaning intense, consistent sunlight year-round. Average elevation is approximately 1,100 metres, which keeps temperatures cool and slows leaf growth, a process that concentrates amino acids and polyphenols. Annual sunshine hours in eastern Guizhou fall below 1,000 — significantly lower than most tea-growing regions — because of persistent cloud cover.
The practical effect is that Guizhou tea plants are naturally shaded for a significant portion of the growing season without artificial intervention. In Japan, shade-growing is achieved by covering plants with shade cloth for 20 to 30 days before harvest — a process that increases chlorophyll (producing the vivid green colour) and raises L-theanine content (the amino acid associated with matcha's calm, focused energy). In Guizhou, the cloud cover approximates this effect without the infrastructure.
This is not a marketing claim. It is a function of the province's geography — low latitude, high altitude, and low annual sunshine hours occurring simultaneously in the same location, a combination that is rare globally.
On processing standards
The characterisation of Chinese matcha as pan-fired and industrially processed is increasingly inaccurate at the premium end of the market. Gui Tea Group, China's largest matcha producer, based in Guizhou, operates on processing equipment sourced directly from Japanese manufacturers Kawasaki and Terada. Their production process uses steaming rather than pan-firing, genuine Tencha processing — meaning stems and veins are removed from the leaf before grinding, consistent with Japanese ceremonial standards — and slow granite stone milling. Finished matcha is ground to 1,300-mesh fineness, equivalent to the particle size used in Japanese ceremonial grade.
The facility operates in pharmaceutical-grade clean rooms and holds EU food safety certification, ISO 9001 and 22000 accreditation, and USDA organic certification. Products are tested against 480 pesticide residue criteria. These are not domestic standards — they are the international benchmarks applied to food exports to the most regulated markets in the world.
On laboratory results
Independent testing of Guizhou ceremonial matcha shows polyphenol content of 16.7 to 31.5 percent and amino acid content of 3.1 to 10.6 percent. These figures exceed China's national standards and are consistent with the ranges documented in Japan's leading ceremonial grade matcha. L-theanine, the specific amino acid that differentiates high-quality matcha from lower grades, is present at levels that reflect the natural shading conditions described above.
On export volumes
Guizhou is currently the second largest matcha exporting region in the world. In Q1 2025 alone, 36 metric tonnes were shipped to North America. This is not a nascent or experimental market — it is an established supply chain meeting demand from buyers who have conducted their own quality verification.
The Japan supply gap
One data point that receives relatively little attention in mainstream matcha coverage is the relationship between Japan's domestic matcha production and its export volumes.
In 2025, Japan exported approximately 8,700 tonnes of matcha. In the same year, domestic production was estimated at approximately 4,000 tonnes. The gap — roughly 4,700 tonnes — is accounted for in part by Japanese trading companies sourcing base green tea leaf from China, processing or blending it, and exporting the finished product. This is an industry practice, not a widely disclosed one.
The implication is that Chinese-origin leaf is already present in a portion of matcha sold under Japanese branding. This does not make Japanese-labelled matcha fraudulent — the blending practices vary and some is fully transparent — but it does complicate the straightforward "Japanese origin equals superior quality" narrative that underpins most premium matcha marketing.
Tasting notes: what is actually different
The flavour difference between Japanese and Guizhou ceremonial matcha is genuine and worth understanding. It is a difference in character, not in quality.
Japanese ceremonial matcha — particularly from Uji in Kyoto — tends toward grassy, vegetal, and nutty flavour profiles. There is a structured bitterness that builds through the cup. The umami is present but embedded in a more complex, layered profile that many drinkers describe as requiring some familiarity to fully appreciate.
Guizhou ceremonial matcha is floral and umami-forward, with a natural sweetness and a softer finish. The bitterness is less pronounced. The overall profile is more immediately accessible to drinkers who are new to matcha or who prefer a less astringent cup.
Both profiles are a function of terroir — the specific combination of soil, climate, altitude, and processing that shapes the leaf. Neither is objectively superior. They are different expressions of the same plant from different growing environments.
What to look for
The variable quality of Chinese matcha makes sourcing specificity important. The following questions apply regardless of origin but are particularly relevant when evaluating Chinese matcha:
- Is the matcha shade-grown? For how long before harvest?
- Is the leaf steamed or pan-fired during processing?
- Is it produced from genuine Tencha — de-stemmed, de-veined leaf — or from whole-leaf grinding?
- What is the particle size of the finished powder, and is it stone-milled?
- Is there a Certificate of Analysis covering pesticide residue and heavy metal testing?
- Can the producer provide specific harvest date, farm location, and cultivar information?
A supplier who cannot or will not answer these questions warrants scepticism regardless of claimed origin. A supplier who can answer them with documentation is demonstrating the transparency that quality requires.
Summary
The reputation of Chinese matcha was built on a specific period of production — the early-to-mid 2010s — when speed of supply took precedence over processing quality in a rapidly expanding market. That reputation has been slow to update despite significant changes in what premium Chinese producers are doing and how they are doing it.
The evidence from Guizhou — on growing conditions, processing standards, laboratory results, and export volumes — does not support the conclusion that Chinese matcha is categorically inferior to Japanese matcha. It supports a more nuanced conclusion: that the quality of matcha, wherever it is grown, is a function of the specific conditions and methods applied to its production, and that those conditions and methods now exist in Guizhou at a level that stands up to scrutiny.
